Beef Short Ribs with Soy and Bay
Long heat. Low light.

Three hours. The oven does the work.
- Bone-in short ribs
- Soy sauce
- Bay leaves, three or four
- One yellow onion, quartered
- Garlic, one head, halved
- Black pepper
- Water
- Season ribs. Let them sit.
- Brown on all sides. Take your time.
- Add onion, garlic, bay.
- Soy and water to cover halfway.
- Lid on. Low oven.
- Three hours. Do not check.
- The meat will tell you when.
